I travelled in Chiapas and found that in the touristed areas (Eg. Palenque) it was really difficult to find a good place to stay for under US$ 20 a night. (If that's cheap enough for you, then you'll be fine) but if not, take a tent as a lot of places in these areas have camp ground which are really cheap to stay at ($ 2-$ 5 a night.) Oh yeah. Also, I forgot to add this in: You can easily eat good food on the cheap in this area. Check out the local restaraunts to see if they have a "Menu del Dia" or "Commida Corrida" on offer. This is a set course lunch which usually includes a soup, a main course a desert and if you're lucky a drink. It's really filling and great value. Expect to pay about US$ 3 - 5 for them, but unless you're a big eater, you wont need a very big meal for breakfast or dinner so you save money that way. Take a tent.
